Deb’s Veg Recipes. Chickpea Cauliflower Potato Curry (from Kathryn). August 21, 2014 at 7:01 pm. One head of cauliflower. About 6-8 small potatoes (the kind with thin yellowish skin) about 2 cups chopped up. 2 cans of tomatoes (normal sized cans, not the large ones). 2 cans of chickpeas. About 2 cups of coconut milk. About 1-2 inches of ginger. 4-5 cloves of garlic. 2 tsp curry powder. Chop the potatoes in small cubes and put in boiling water until soft, about 10-20 minutes. Entry filed under: easy.
