Monday, July 26, 2010. 10 6inch corn tortillas. 1 15 -ounce can pinto beans or black beans, rinsed and drained. 1 tablespoon chopped chipotle pepper in adobo sauce. 2 cups of shredded 4 cheese Mexican blend. 1 10 ounce can of enchilada sauce. Grease a 2 quart rectangular baking dish. In a med bowl combine beans, chipotle pepper, 1 cup of cheese, and 1/2 can of enchilada sauce. Spoon about 1/4 cup of filling onto the tortilla. Roll up each tortilla,. Top with remaining enchilada sauce.

We finally interpreted "Harold". For non-Thomas the Train addicts, Harold is the helicopter on the show. Go figure, this kid would be able to say "Harold" when he can't even say simple stuff! Anyway, we found the source for the low-flying helicopters . . . a helitour place nearby. There was a couple there. We did a lot!

Garlic-Brown Sugar Chicken (Crockpot). 3-4 large chicken breasts (I put them in frozen). 1 cup packed brown sugar. 1/4 cup Sprite or 7-Up soda (I've always omitted this, and it's still been a-maz-ing! 2-3 tablespoons minced garlic. 2 tablespoons soy sauce. 1 teaspoon pepper (I use black, but you can use cayenne to kick it up). Place chicken in crock pot and pour everything else on top. Cook on low for 6-8 hours and just sit back and enjoy the incredible smell that fills your house!
