Vegetable stock preserves the nutrition from the vegetables and adds a vitamin punch to your other recipes. Keep some handy! 1 c chopped onions. 2 tablespoons vegan butter or vegetable oil. C carrots, chopped. 2 c celery, chopped. 1 c shredded greens (lettuce, spinach, or herbs). Sautee onions in the butter or oil. Add more water to cover and simmer for 2 hours.

January 10, 2013. 1 onion, chopped. 1 stalk celery, diced. 1 carrot, peeled and diced. 1 pound cremini mushrooms, quartered. 1/2 cup white wine. 1 (28-ounce) can whole tomatoes, pureed in a blender. 1 sprig fresh rosemary. 2 cups cooked white beans (equivalent to one 16-ounce can), drained. Coarse salt and freshly ground pepper. Deglaze with wine, scraping up any brown bits with a wooden spoon. Moroccan Lentil Vegan Stew.
