Makes 4 -5 full sized patties or a dozen plus minis. 1 teaspoon garlic powder or fresh garlic finely minced. 1 teaspoon dried thyme-or a sprig of fresh. 1/2 teaspoon smoked paprika. 1/2 teaspoon ground chipotle pepper or dried chipotle, soaked and finely chopped, optional. 1/2 cup red or green pepper, finely diced (about 1/2 pepper).
