I made two pizzas but not the third. So the dough was smelling like beer and was way over-fermented. I thought I’d take a chance and use it in today’s bread. But after the second turn (stretch and fold) it was holding together much better. And by the end of the third hour I knew it would be fine. Or, I hoped so. May 15, 2016.

The middle is moist and the whole thing is just delicious. 1 stick of unsalted butter. 1 1/2 cups of sugar. 1 quart of skim milk. In a large bowl (I used a 12 quart cambro container. Tear up the bread into 1 inch pieces. Mix eggs, milk, sugar and 2tbs vanilla. April 10, 2016. 2 cups all-purpose flour. 1 tablespoon baking powder. 1/4 teaspoon baking soda.

It was based on a focaccia formula. The dough is made over two days, using an overnight poolish. It uses a lot of oil so it is not a low calorie food.
