CHIPOTLE SWEET POTATO SOUP. 2 tablespoons olive oil. 2 large sweet potatoes, diced. 1 onion, diced. 1 red bell pepper, diced. 2 carrots, diced. 4 chipotle peppers, seeded and chopped, along with 2 tablespoons adobo sauce (recommended: Goya chipotle peppers in adobo). 1 tbsp brown sugar. 5 cups vegetable stock. Scallions, cilantro, or other green garnish. Bring soup back up to temperature, and serve, topped with scallions or cilantro.

As usual, I served this with a green salad and homemade lemon vinaigrette and some toasted Italian bread. You'll be happy to know this soup recipe is quick, nutritious, and large; be ready with your Pyrex because you will have leftovers! ACORN SQUASH AND BEAN SOUP. 3 cloves garlic, minced. 5 cups vegetable stock or water.
