Sea creatures and vegetables on your plate. 5-6 medium sized baking potatoes, peeled. Use a box grater to grate the onion and the potatoes into a colander. Press the grated onion and potato down firmly, squeezing liquid out of the colander. Using a dish towel, take one handful of the grated mixture and squeeze out the rest of the liquid. Dessert tonight took center stage and I just can't wait to share it. This is super easy and so delicious, and you will think you are enjoying something so sinful; but you're not! This makes one 16 oz. serving, so multiply as needed. 1 cup cold almond milk. 1-2 frozen bananas, in chunks (depending on how thick you like your shake).

Sea creatures and vegetables on your plate. Chipotle Sweet Potato Soup. CHIPOTLE SWEET POTATO SOUP. 2 tablespoons olive oil. 2 large sweet potatoes, diced. 1 onion, diced. 1 red bell pepper, diced. 2 carrots, diced. 4 chipotle peppers, seeded and chopped, along with 2 tablespoons adobo sauce (recommended: Goya chipotle peppers in adobo). 1 tbsp brown sugar. 5 cups vegetable stock. Scallions, cilantro, or other green garnish. Bring soup back up to temperature, and serve, topped with scallions or cilantro.

Sea creatures and vegetables on your plate. I got some inspiration for this soup by poking around some various recipe search engines and coming up with something that worked for me. As usual, I served this with a green salad and homemade lemon vinaigrette and some toasted Italian bread. You'll be happy to know this soup recipe is quick, nutritious, and large; be ready with your Pyrex because you will have leftovers! ACORN SQUASH AND BEAN SOUP. 3 cloves garlic, minced. 5 cups vegetable stock or water.
