Brown Buttercrunch Cookies

1/2 c salted butter. 1 c old-fashioned oats. 1/2 c corn syrup. 2/3 c dark brown sugar. 1/4 c heavy cream. 3 c (6 oz) semisweet chocolate. 2 t corn syrup.
Pecan Balls

2 c sifted flour. 1/2 c granulated sugar. 1-1/4 c pecans, ground. Cinnamon Sugar, Vanilla Sugar or Vanilla Confectioners' Sugar. 2 sticks (1 c) unsalted butter, softened. Combine flour, salt and ground nuts. In a mixing bowl, cream butter, add sugar, and beat until light and fluffy. Beat in vanilla, then add flour and pecan mixture. Form dough into ball, wrap in wax paper, and refrigerate 1-2 hours. 1 vanilla bean, cut in 1-in segments. Mix in food processor, store for 1 week before use.

1 gallon apple cider. 1-1/2 t whole cloves. 2 c orange juice. 3 (3-in) sticks cinnamon. 1 c lemon juice. Peel orange and lemon, being careful to keep rinds intact; insert cloves in each rind strip. Combine rinds, cinnamon sticks, sugar and apple cider in a large Dutch oven; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Remove and discard rind strips and cinnamon sticks. Add orange and lemon juices to mixture, and cook wassail until thoroughly heated. Yield: about 5 quarts.

1 box brown sugar. 1-1/2 c pecan pieces. Place all ingredients except vanilla into pan. Bring to boil. Let cook 5-7 minutes, stirring constantly. Remove from heat. Stir in vanilla. Drop onto wax paper.
Cinnamon Pecans

1 lb shelled pecans. Mix cinnamon and sugar; set aside. Mix pecans and egg whites, then sprinkle with cinnamon-sugar mixture. Stir until coated. Spread on large pan and bake at 350°F for 15-20 minutes.
