Recipe from King Arthur Flour. 3 medium-size zucchini, about 9″ to 10″ long. 1 cup Panko bread crumbs. Scant 1/2 cup freshly grated Parmesan cheese. 1 tablespoon Pizza Seasoning or mixed Italian herbs. Rinse them thoroughly; you want to get rid of any excess salt. Then pat them dry. Yummy food to eat. June 10th, 2010. This is a really cool cake; simple but really neat. I have seen smaller cupcake designs before, but nothing which required this many cupcakes and so large. I suppose the neat thing is that if you wanted then you could move the pacman and the ghosts around.
