Hope everyone had a wonderful fourth of July holiday! Celebrating America’s birthday is so much fun when you’re with your friends, family, sipping on a Mimosa and lots of food.😉. We decided to head out to Olcott Beach overlooking Lake Ontario. This place is a hidden gem that is so beautiful! It’s a must see. So for the menu items, I decided to make some grilled vegetable sandwiches with homemade pesto and a pasta salad. This will make 6 sandwiches. 1 red onion cut into thick slices. 2 tbsp olive oil.

I am a big coffee fan and if I could I’d make a full pot and drink the whole thing. I’ve decided to cut my coffee down to one cup a day. Trust me it’s been hard. So to help with the cravings and continue with my healthy kick, I want to start making more smoothies. Plus you get an extra antioxidant boost with all the berries! To my surprise this recipe tasted so yummy I wanted another one. All the fruit was in my freezer so I didn’t add any ice. 1 tbsp greek yogurt. 1/3 cup of skim milk. 1 tsp chia seeds.
