It just wouldn't be Christmas without this cake. 6 T unsalted butter. 2 c evaporated milk. 3 T baking powder. 4 c whole cranberries, rinsed and picked over. 2 t baking soda.

Thursday, June 13, 2013. The secret to great black bean burgers. Green olives. That's the secret. Not lentils. Not mushrooms. Green olives. This is how I make them. Soak dry black beans in water for 8 hours or overnight. Drain, rinse, and put in a large pot with enough water to cover them by about three inches. Bring to a boil, reduce heat and simmer until tender. Skim off the scum as it cooks, and after about 20 minutes add seasoning - salt, garlic powder, and oregano. Lots. Trust me.

Sunday, January 5, 2014. Fruit salad. For real. This is a serious fruit salad, meaning that the ingredients include fruit. And only fruit. You might be skeptical about the presence of fresh (tart! Cranberries and the absence of sugar, but the dates and other fresh fruit and just enough sweetness. It passed the 4/3 year old taste bud test with flying colors. 2 c frozen wild blueberries. 5 oranges, peeled and chopped. 2 oranges, juiced. 1 lime, juiced. 4 to 8 oz fresh dates. Sunday, September 2, 2012. 1 (ish) Tbs olive oil. 1 yellow squash, halved and sliced. 1 eggplant, peeled, quartered and sliced. 4 to 6 tomatoes, chopped. Salt and pepper to taste. The recipes that I have read included fresh basil or marjoram but I didn't have any on hand. I thought about adding dried herbs but the taste was so good that I just served it with salt and pepper. Layers of vegetable goodness. 4 c milk (I used water mixed with powdered milk). 2 T butter (I used unsalted, so if you use salted you may need to decrease the amount of salt). 1 tsp kosher salt. 1/4 tsp freshly ground pepper. Scant 1 c polenta (because this is all I had, but if you double the recipe use 1 3/4 cups). This is Jamie Oliver's recipe, using tomato sauce instead of canned tomatoes because that is all I had. 1 T olive oil. 2 to 3 cloves garlic. 2 14 oz cans tomato sauce.

Come hell or high water, my mom made travel happen, whether it was a camping trip on a shoestring or a family cruise. So I told Jon he could blame her for my constant trip scheming. After enough pestering, Jon made a monumental effort to clear his crazy work schedule and we took our first family vacation to Seattle. And it was awesome.
