In Cooking from Quilt Country. 1 1/4 cups small pearl tapioca. 2 cups dark brown sugar, no substitutes. 1/2 cup granulated sugar. 1/2 cup plus 2 Tbs butter (1 1/4 sticks). 2 tsp vanilla extract. Bring the water and salt to a boil in a large, deep saucepan. Sprinkle in the tapioca and cook, uncovered, over medium heat for 15 minutes, stirring often.
