Wednesday, January 09, 2008. New year, same me. First, the non-meat loaf, made with beef style TVP, sauteed carrots, celery, onions, and garlic with herbs, nooch, breadcrumbs, and ketchup. Glazed with yummy tomato-lemon preserves I picked up from the farmers market the weekend before. Looks just like the loaf of my childhood. This was one of the best brunches ever. I'm up for the challenge! Saturday, November 17, 2007. Or "Another Cheesey Night". We had another TV ball-game evening, so I was begged for pizza. Now, homemade, good-for-you, without- a-ton-of-cheese- and-meat-toppings pizza just does not fly around here. So as a compromise, we had Papa Murphy's. So I could modify it at home. Their new advertising campaign says, "We can do that! And it was true. They honored all of my special requests without even a sigh of impatience. Thank you! Eat, Drink and Be Vegan.

With all the odds against us- constant rain, flakey people, no truck, a busted up trailer, blah, blah, blah- we some how managed to get our float in the Pride Parade, and had a hell of a good time doing it. Sunday, April 08, 2007. Hey, it's my 21st post! Not that it is very significant, but I'm just suprised. Beans and greens seem to be a trend in my kitchen lately. Here is something I call Health on Toast. For the upcoming Canadian Seal Hunt Protests here in Houston, a couple of us crazy activists got together to make some signs. I'm up for the challenge! Saturday, November 10, 2007. Dinner was leftovers. But to add to it, I whipped up some Pumpkin Muffins. They were wonderful. My Vegan Yarn Swap 2 pal, Janice. Provided me with the recipe. (It's a PPK. Recipe.) I substituted pumpkin seeds sprinkled on top for the chopped walnuts mixed in. Delicious! 1-3/4 cups flour (I used whole wheat pastry flour). 1-1/4 cups sugar (I used vegan beet sugar). 1 tbsp baking powder. 1/8 tsp ground cloves. 1 cup pureed pumpkin (I used canned).

Inspired by the classic kale and avocado salad, this dish was a hit in NY when I made it, almost on a daily basis, for everyone at The Plant. Chipotle peppers are jalapeno that have been smoked, and so are not raw. However, I love to use them as they have such a great taste and you don’t need to use many! I was just not in a big cooking mood recently, so there was not much to show here. Most nights, I noshed on leftovers, steamed frozen veggies or peanut butter and crackers. Where we consumed mass quantities of wonderful food, had excellent service provided by Heather and finished with birthday cake and a serenade by Austin. Everything was terrific!
