Danach in der Flüssigkeit das Fleisch abkühlen lassen, aus der Flüssigkeit nehmen und den Fond durch ein Sieb in einen Topf passieren und ein reduzieren bis die Sauce leicht andickt. Mit Salt,Peffer und der Marmelade abschmecken. Den Schweinebauch in 4 gleich Große Portionen schneiden, und im Ofen bei 130 Grad erwärmen. Schweinebauch mit Mais und Blaubeere.
