Another truly wonderful Caribbean-inspired dish is one taken right from the cookbook written by the owners of the Sugar Mill Hotel on Tortola, BVI. Avocados grow bountifully in the Caribbean when in season. They are one of my absolute favorite produce-items, as they are rich, creamy, and so good for you! This sauce is an excellent way to enjoy their wonderful flavor and texture–and it’s definitely not something you see on many menus! January 4, 2011.
