From South Beach Diet. 2 cups cauliflower florets. 1/2 ounce butter-flavored spray (or 1 tbsp of butter or to taste). 1/2 ounce fat-free half and half (or 1/2 ounce milk or to desired thickness). Pinch freshly ground black pepper. Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste.
