He has the most aggressive type of brain cancer there is (Glioblastoma) for which there is no remission and no cure.and so far he is still able to drive, program, work, talk, .all that normal stuff. He is himself.with side effects from the chemo. This is the cancer that has a 14 month median survival rate WITH TREATMENT. Me, on the other hand: I am a wreck. Casein Free Dulce De (coconut) Leche Ice Cream. 3/4 cup clarified butter (Ok, I will admit it, I used regular butter this time.but to make the recipe casein free, lets use clarified butter, shall we? 1 lb bag of coconut crystals. Melt the butter and sugar together until brown and bubbly. don't boil it. You aren't making candy. Add: 2 cans of Trader Joe's coconut CREAM and 3 cans of Trader Joe's coconut MILK. Stir all this in. whisk whisk whisk! This recipe is NOT low fat. ;-).

And this, just after I have blogged about how the cancer journey feels like exile (SO NOT a good thing). But it challenged me, and I started to ponder.I should look for the good. Calorie Controlled Freezer Meals, part 2 (the shopping list). 24 oz mushrooms (if you make more than the number of meals I made, you will need more mushrooms.I only did up 4 chicken meals because I only had 4 breasts on hand). 1 can of coconut cream. Bag of Frozen Corn (get organic if you can, corn is often GMO). Bag of Frozen Peas. Costco Salmon Patties OR Salmon fillets. Grass Fed Beef patties (4 oz. each).I get mine at Trader Joe's. 2 cans of chick peas. 2 cans black beans.
