the existential chef: January 2008
http://existentialchef.blogspot.com/2008_01_01_archive.html
Because everything tastes better on square plates. Monday, January 14, 2008. Everybody has his own favorite recipe for spaghetti sauce and meatballs. Here's mine. I prefer to emphasize savory herb and spice flavors rather than the sticky sweetness which is common in American sauces, so bear that in mind if you follow this recipe. 1 1/2 c. red wine. 1/4 c balsamic vinegar. 1/4 c olive oil. 1 white onion, diced. 1 green bell pepper, diced. 2 cloves garlic, crushed or minced. 2 tsp crushed red pepper flakes.

At least, it's hot enough to be hot in a city where no one has air conditioners. This is not weather for making a hot dinner. Let's make a salad of things. Yes Let's make a salad. Wheatberry salad with roasted fennel and honey-citrus vinaigrette. 1 c dry soft wheatberries. 1 large bulb fennel, root base removed. 2 tbsp. stone-ground mustard.
the existential chef: August 2008
http://existentialchef.blogspot.com/2008_08_01_archive.html
Because everything tastes better on square plates. Saturday, August 9, 2008. My love affair with butternut squash continues unabated, so I thought I'd try making a dessert with it. This is a fairly light and subtle dessert, so it'd be good in contrast to a heavy meal or as a sweet hors d'oeuvre. This recipe makes about 50 wontons, so adjust for your needed scale. Image courtesy of the also-lovely Nooreen Meghani). One medium butternut squash. 1/4 c real maple syrup. 1/4 c mixed pistachios and almonds.
the existential chef: Wheatberry salad with pan-roasted corn, blueberries, and gorgonzola vinaigrette
http://existentialchef.blogspot.com/2011/07/wheatberry-salad-with-pan-roasted-corn.html
Because everything tastes better on square plates. Friday, July 22, 2011. Wheatberry salad with pan-roasted corn, blueberries, and gorgonzola vinaigrette. It's still hot. We need more salads. Also, I still have wheatberries. And my CSA box came in today with fresh corn, lovely plump blueberries, and some sort of weird squash. I suppose we'd better get to business. Berries and vinaigrette are a seriously winning combination. Let's make that thing. 15 c dry wheatberries. 4 ears fresh summer corn. Repeat th...

Because everything tastes better on square plates. Tuesday, July 26, 2011. Goat cheese, caramelized onion, and summer squash calzone. Its finally cooled down in Boston, so its safe to turn on the oven again. As if on cue, my old college friend Randalle. Just turned out a goat cheese and summer squash pizza. Which sounds delicious. What better homage can I pay than to steal this idea, mangle it until its nearly unrecognizable, and backlink? Anyway, Im going to make a calzone. Slow-rise olive oil bread.
The Ambulances Will Have to Wait Their Turn
Wednesday, April 21, 2010. I haven't written anything here for quite a while. When I arrived, there were several cobwebs, some dust piles, and something that I swear was gnawing on a bone, huddled in a corner. Upon chasing whatever the Hell that was out, and a little sweeping, I find myself sitting here at a keyboard, with some things to get out and onto virtual pages. I'm going to stop here for a minute so that I can ask the question that you read in the title of this blog. What is "right? I repeated mys...
