Tuesday, December 9, 2008. Here are some ingredient substitutions for those times that you just do not have what you need. Baking powder: for each teaspoon of baking powder use; 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar, or 1/4 teaspoon baking soda plus 1/2 cup buttermilk (decrease liquid in recipe by 1/2 cup). Butter (unsalted): need 1 cup, use 1 cup shortening. Or 7/8 cup vegetable oil or 7/8 cups lard. Fats for baking: need 1 cup, use 1 cup applesauce. Or 1 cup fruit puree.

Tuesday, October 28, 2008. My boys love these. They ask for them all the time. Preheat oven to 400. Spray 2 9"x13" pans. 3 cans refried beans. 14 to 16 tortilla shells. 2 large cans enchilada sauce. 1 lbs grated cheese. Brown the hamburger. Add the beans to browned hamburger warm up. Slice up or crumble up olives into the hamburger mix. Pour some of the sauce in a shallow bowl. dip shells in the sauce, coat both sides of shell. If wanted you could add chopped green chilies or jalapenos to hamburger mix.

Tuesday, November 18, 2008. 6 Tablespoons sour milk. 1 cup nuts chopped. Dissolve soda in sour milk; set aside. Cream together sugar and shortning until smooth. Add salt, eggs, and bananas. Alternate the flour and milk mixture; beat well. Add the nuts. Bake 50-60 minutes at 375. Makes 3 loaves. To get sour milk add about 1 1/2 teaspoon of vinegar and enough milk to make the 6 Tablespoons needed. Let stand 3 or 4 minutes to thiken. Then desolve the soda in the milk. Thank you Leslie for this. 2 T olive oil.

Thursday, December 18, 2008. 2 packages of link sausage or ground will work. 2 pounds of hash browns. 18 to 24 eggs. One med package of grated cheese. Can be cut in half this is what my family eats. Brown sausage set aside. Once the hash browns are cooked to desired crispiness scramble eggs pour on to hash browns, cook until slightly runny add sausage.
