In a large skillet add chicken and mushrooms, cook for 8 minutes stirring frequently. Remove mixture from skillet, put in bowl, cover and place in microwave to keep warm. Kate's Moist Corn Muffins. 2 tsp baking powder. 1/2 cup brown sugar. 1/8 tsp cayenne pepper. 1/2 cup butter milk {1/2 cup milk, 1/2 Tbs vinegar; let stand 5 minutes}. 1/4 cup vegetable oil. 1 Tbs miracle whip. Preheat oven to 400 F. Place 12 liners in a 12 cup muffin tin. Mix dry ingredients in large bowl. In another bowl mix remaining ingredients. Add wet mixture to dry mixture. Mix well. Fill liners evenly {about 3/4 full}. Bake 15 minutes or until golden. What I look like.

Kate's Banana Peanut Butter Oatmeal Chocolate Chip Muffins. 1 cup quick oats. 1 tsp baking soda. 1 tsp baking powder. 1/2 cup brown sugar. 1/3 cup peanut butter. 2 ripe bananas - mashed. 1/3 cup apple sauce. 1/2 cup chocolate chips. Grease muffin trays {makes 24 muffins}. Preheat oven to 400. Combine dry ingredients and mix well {except for chips}. In a separate bowl combine remaining ingredients. Combine wet and dry mixtures - do not over mix! Muffins will be chewy if you do!

Wednesday, April 27, 2011. 1/2 of a 16 oz pkg linguine or your choice of pasta. 1 cup fresh or frozen broccoli florets. 1 lb boneless skinless chicken, cut into pieces. 1 can cream of mushroom soup. 1/2 cup of milk. 1/2 cup grated Parmesan cheese. 1/4 tsp ground black pepper. Heat butter in skillet on medium heat. Add chicken and cook until well browned, stirring often. Stir soup, milk, Parmesan, pepper, pasta and broccoli into skillet. Cook until mixture is hot and bubbling. Not all of course, but some!
