Sauvignon Blanc (Humboldt County). Sauvignon Blanc (Humboldt County). As we have made Sauvignon Blanc for many years, we followed our normal procedure of lightly pressing the grapes, followed by a few days of allowing the juice to settle. As this harvest produced juice with a slightly higher TA (titratable acidity) than the Sauvignon Blanc from Redwood Valley, we stopped the fermentation a bit earlier than normal to better balance the TA with the residual sugar. Sauvignon Blanc (Humboldt County). Farley Peak sits at about 3000 feet just south of Laytonville in northern Mendocino County. Production levels are restricted to about 2 tons per acre. The grapes were destemmed, not crushed, and fermented in open vats, with the must being punched down manually every 6 hours for 5 days. After pressing and a short period in a settling tank, the wine was racked to new Hungarian Oak cooperage. The wine was lightly filtered before bottling. Leave This Field Empty.

Sauvignon Blanc (Humboldt County). We were very lucky to find this vineyard. Looking for a good source for chardonnay, one of our growers suggested Mike Arreguin, a vineyard manager in Mendocino County. When I talked with Mike, telling him that we were only looking for a few tons of fruit, he immediately suggested I talk with his father, Joel, who farms just a few acres of land.
