Cover the dish with plastic wrap or a clean tea towel, and leave to soak overnight, or for 8 to 12 hours, at room temperature. 1 pound (about 4 medium sized) potatoes. 1 large yellow or white onion, peeled and finely chopped. 2 tablespoons vegetable oil.
