Roll the roast in tortillas with rice and black beans. We added sour cream and cheese - DELICIOUS! I used canned black beans with onion and garlic added and plain white rice because I was in a hurry. They are absolutely, eye rolling into the back of your head, delicious! The Relief Society at church has a contact with someone who can get fresh fruit for us so we all go in and buy some together.
