My Roast Chicken Jerusalem. 2 cloves garlic, minced. 1/2 onion, chopped. 2 tsp fresh thyme (1/2 tsp dried). 2 Tbsp olive oil. 1/2 chicken, split for roasting. 2 cups good white wine. 1 can chicken broth. 1 can artichoke hearts, well drained and quartered. 1 8 oz pkg fresh mushrooms, sliced. 1 cup heavy cream. 1 pinch red pepper.
