I'm a professional cook in Seattle, just hoping I can provide some BOH perspective. Tuesday, August 3, 2010. An experience like that reminded me why I like doing what I do. I've been working 60 hour weeks lately, and while I'm certainly not burned out yet I think I needed a little reminding. I like that the article shows the chefs' perspective. You really get a sense of the chefs' frustration over how dining out has become, in the words of the LA Times, theater. Sure, as I and Huffstutter mention, the free publicity and marketing is great but in the words of Chef Ludo Lefebvre, "Respect the food! The Salmons getting cold!
