Paleo Chicken Bacon Avocado Salad. April 13, 2014. I have been craving chicken salad! I needed to cook the chicken in the fridge before it expired so I decided to come up with a healthy Paleo version of chicken salad. 15 lbs of chicken breast (boil and shredded). 2 super ripe avocados. 3 hard boiled eggs. 4 slices of bacon (crumbles). 1 TBSP spicy mustard.
