一名资深老饕报料,当年在三条路卖了几十年的芋头饭的传入有在Perak Road营业。记得小时候爸爸喜欢带我到那一带吃人车饭(早期是人力车夫休息时吃的饭菜),还记得当年我还能在饭档前长长的木凳上蹲着吃呢。这般的古早味,我是绝对不能错过的。 这里的芋头饭并不像现在市面上流行的,芋头饭配咸菜汤,配苦瓜汤,配猪杂汤。这里的芋头饭主要配搭店家当天预先煮好的几样汤菜(既是汤,也是菜),然后再备上几道熟菜,多是酱油肉,猪皮,卤蛋,卤肉(炸肉卷),炸虾饼,炸鱼肉和一些小菜供选择。 吃的人省一些就点一个汤和一个饭,吃得丰富些就几个汤加几个小菜,十分方便。 粒粒饱满完整的米饭,加了软糯的芋头更添香气,店家依传统加入大大块炸香的猪肥膘入煮饭锅中,让油脂透过米饭的焖煮逐渐让颗粒吸收油脂,这个办法比直接加油来得好,使米饭不会过于油腻,但还能达到包裹米饭的目的,另每口米饭更加的香滑可口。 早期芋头饭是苦力人的廉价主食,选米并不会太好,所以会比较粗糙,适当的油脂能令米饭更香滑,更容易入口。 炸鲨鱼肉,这个也好,鲨鱼肉新鲜,并没有怪怪的味道。 336-1-G, Jalan Perak. 吃了二十多年的琵琶鸭,喜欢他的皮脆...
