Saturday, April 11, 2009. Hopefully this will be my last post for a while on this phase of my journey with IBC. I say that only because I make a point of not letting cancer define me and I never want it to be all-consuming of my daily life and activities. So that said, here's the plan for moving on :). This is my version of Tater Tot Casserole - I think it's absolutely yummy! 1 pound ground beef. 1 onion, chopped. 1 package frozen corn (or mixed veggies). 4 ounces velvetta cheese, cut into 8 slices - you can also use shredded cheese if you prefer. 2 cans cream of chicken soup. 1 soup can milk. 1 package tater tots. Brown beef with onion, drain. Layer in bottom of casserole dish sprayed with Pam.

Brieann is due to have Baby Lenox September 15th and I am SO excited for her to be here! She is going to be so spoiled by our family! It is coming so soon!
