That may be a slight exaggeration but none the less I am blissfully savoring the delight of having a pot filler (who knew I needed one! One enormous farmhouse sink and an island sink! Due to the addition of fresh grated Romano cheese and gently sautéed shallots, no stock is needed to simmer the quinoa (good thing, since I am out of stock! 1 large red pepper, cut in half length-wise, and cleaned. 1 medium shallot, thin-sliced. Cup grated Romano cheese. 1 cup cooked quinoa. 2 tablespoons olive oil. Salt and pepper to taste.

A few suggestions from my critics (which would include my daughter and husband) would include “More cheese! Other ideas for additions to this dish would include grilled shrimp, lemon zest, and red onions- certainly any variations you would want to try can only enhance the humble and oft overlooked spaghetti squash; perhaps even sour cream.
