Enjoyment of Necessity

An account of food made and enjoyed, not food eaten and calculated. Saturday, February 12, 2011. A tale of two chilis. It was the end of the first week back after vacation and I hadn't been to the grocery store yet, so I made my first visit to a local soup place to pick up some dinner. Slightly concerned about the price, and newly dairy-free, I opted for the Sweet Potato Black Bean Chili. It did not disappoint (very filling! Here's the original, very good in its own right, recipe:. 1 onion, diced. 1 Inst...

http://www.food4rachel.blogspot.com/2011_01_01_archive.html

An account of food made and enjoyed, not food eaten and calculated. Thursday, January 13, 2011. 1 can tuna, drained. 1/4 c chopped fresh cilantro. 1/4 c diced green peper. 2 squirts lime juice. Mix eat with lightly salted pita chips. Monday, January 10, 2011. Coconut chicken curry soup. Soup night was well overdue for a return and we kicked the round off well. I'm a wuss so I left out the jalapeno. Regardless, this is really good soup. Coconut Chicken Curry Soup. 1 Tbsp olive oil. 2 tsp curry powder.

Speechie Bear: February 2010

http://ejandco.blogspot.com/2010_02_01_archive.html

Thursday, February 25, 2010. My mom keeps bugging me about how I am still "in the midst of chaos". In other words, she thinks it's annoying that I haven't updated my blog in about.3 months. Whoops. BUT, unfortunately (and not all that surprisingly), the label still applies, although in a bit of a different way. Sleeping in my own bed. Driving my parent's new car. Hanging out with my fabulous family! Especially my parents and sister, of course). Hanging out with my favorite Green Beret. Partying at a coup...

Speechie Bear: September 2009

http://ejandco.blogspot.com/2009_09_01_archive.html

Monday, September 28, 2009. Not gonna lie, I have really been missing the familiar lately. Between all the fabulous pictures I've seen of ArtPrize (extremely bummed I can't see all of that beauty, by the way) and the updates from my fabulous roommates that I've been getting, it makes me a little bit sad that life has moved on. My roommates (all 6 of them) and every interaction, planned and unplanned, that living in a house with 6 beautiful, funnay (yes, not just funny), talented, powerhouse women entails.

Sunday, August 23, 2009. And so, that brings me to the next adventure on my list. School starts tomorrow! Of the trip out to Colorado and my apartment! Friday, August 21, 2009. And, just this morning, I climbed an actual mountain (well, only part of the way up. stupid lack of oxygen) with my new friend, Diana. It was. Part of the view from our rock ). Speechie Bear: Generosity

http://ejandco.blogspot.com/2010/04/generosity.html

Wednesday, April 21, 2010. Does it have to be some grand gesture or can you be generous on a small scale? Does generosity have to involve something material or can it involve some other area, like emotions? My hope for myself is that I will be able to find ways to be generous to others on the smaller scale and look forward to when I have opportunities to be generous on a much larger scale! Speechie Bear: December 2009

http://ejandco.blogspot.com/2009_12_01_archive.html

Tuesday, December 1, 2009. In the midst of chaos. It's much easier for me to update my blog when it involves procrastinating on homework than when it means taking up good family/relaxation time. It also helps that I'm sitting in a class that no longer holds my attention because my brain just dead. At this point, I only have three (! Days of class left and next week is finals. I have spent all day trying to fathom the fact that (1) it's December (umm.what? Subscribe to: Posts (Atom). In the midst of chaos.

Speechie Bear: Mountain Sunrise

http://ejandco.blogspot.com/2010/04/mountain-sunrise.html

Tuesday, April 20, 2010. I wrote this post a couple weeks ago when I was bored in class (imagine that) and never got around to posting it. Better late than never, right? We only have 3 (actually only 1.5 now! Weeks of classes left in the semester and then one week of "finals" and paperwork. I seriously can't believe I'm almost finished with two semesters of graduate school! Sooo, summer would be the perfect time to plan your visit! HINT, HINT. NUDGE, NUDGE. :). In all honesty, thoughts of hiking and hors...

Sunday, October 18, 2009. Eastern slope of the rocky mountains. Western slope of the rocky mountains. Much, much more to come! Tuesday, October 6, 2009. Public education at its finest. We spent the first hour of my 3 hour night class watching the Tigers/Twins game online because my professor is a huge Twins fans. Good thing I'm not paying a lot of out of state tuition for this class. Insert annoyed face picture here:. Thursday, October 1, 2009. Subscribe to: Posts (Atom). View my complete profile.

Speechie Bear: March 2010

http://ejandco.blogspot.com/2010_03_01_archive.html

Wednesday, March 17, 2010. I am officially in the midst of SB '10 and I'm not having a completely terrible time! I think the only reason I'm looking forward to being done with Spring Break is that we only have 6 weeks of classes left in this semester and I am quite ready for this semester to be over. (I suppose you could also say that I'm kind of (read: VERY! Excited to have my parents and sister here at the end of next week! Because I don't really have much else right now, here is a list of random things.
