Now that Christmas is over, we are out of the season for hearty fruitcakes. Instead, the new year's eve calls for dainty canapes and elegant desserts. Which is why I am calling Jamie Oliver's elderflower jelly. Cover the bowl with cling and let set in the fridge for at least 2-3 hours. Dip the bowl in hot water for a minute and invert on a plate.

It's simply my regular salted caramel sauce with some balsamic vinegar added in. But somehow that one addition makes the sauce sweet and salty and tangy all at once. It's really hard to explain how good this is so you will just have to make it yourself. Like right now! 1 cup caster sugar. 1 tsp white vinegar.
