A blog about food and stuff. Wednesday, September 7, 2011. One of my absolute favorite pastimes as a kid was what I called "Lost in the Woods." The sparse patch of trees behind our suburban Maryland house was, in my imagination, the deep wilderness, where my friends and I built shoddy shelters out of branches and subsisted on the nectar of wild honeysuckles that grew back there or, more often, on the leftover Halloween candy we’d conveniently stuffed into our pockets beforehand. But here's something new from the Keller crew via Yahoo Food. 1 cup distilled white vinegar. 188; cup sugar. 1 tablespoon yellow mustard seeds. 1 tablespoon Tellicherry peppercorns. 1 teaspoon chili flakes. 1 teaspoon star anise. 2 stalks celery, sliced to fit in pickling jars. 4 cloves garlic, peeled and halved.

Exceptionally fresh, sweet and succulent, my dinner companions questioned if the golden snapper wasn't a poorman's lobster. Scattered aromatics of leeks, fennel, parsley, and lemon adorned the sea specimen before we packed it into its parchment paper package to roast for roughly 10-15 minutes on 400 degrees.
