Thursday, November 6, 2014. Pumpkin Chocolate Chip Cookies. And I really love the result. To me brown butter and fall go hand-in-hand. To be sure they are still soft, especially if you are not careful to cook them thoroughly, but especially right out of the oven they have a nice crispy exterior. They tend to soften more as they are stored. 1 C (2 sticks) Unsalted Butter. 1 C White Sugar. 1 C Light Brown Sugar. 1 tsp Vanilla Extract. 1 C Canned Pumpkin Puree. 3 C All-purpose Flour. 2 tsp Baking Soda.

Panko bread crumbs. 1 lb Striped Pangasius, petrale sole or other thin white fish fillets (8 to 12 fillets), cleaned, skinned. Vegetable Oil for frying (I use grapeseed oil). This is striped pangasius from Trader Joe's. Very mild. In a pie plate, baking dish or wide bowl, blend the flour, chili powder salt and pepper. Heat vegetable oil in a 12-inch skillet over high heat. ...

Tuesday, November 11, 2014. Sole with Brown Butter Lemon Sauce. 1 lb Dover Sole fillets. 1 1/4 tsp. Salt. 6 Tbsp. Unsalted Butter. 1/2 tsp. Black pepper. 2 oz Fresh Lemon Juice. 1/4 C Flat-leaf parsley. Preheat the oven to 300°F. Dry the sole fillets. Mix flour, 1 tsp. salt and 1/2 tsp. pepper in a large flat dish (I use a pie plate). Dredge the fillets in the flour and shake off the excess. Stack layers of fish between wax paper. Remove from heat immediately as it burns quickly at this point.

Friday, December 7, 2012. 2-1/2 Lbs. Potatoes (I use simply potatoes from the refrigerated section of the grocery store). 3 Eggs, beaten. 1 tsp Baking powder. 2-1/2 tsp. Salt. 1/4 tsp. Pepper. 2 C Matzo meal. Drain on paper towel. Serve with applesauce and/or sour cream. This year we got a little fancy and served them with creme fraiche and homemade persimmon jam. Ever since they took up residence. For some special Mommy and Rhys time, he and I attend the breakfast. Well, we didn't end up eating there - the line was too long and they were waiting on more pancakes - but we did get to see the engines! This is the last time I hope he ever sees the inside of an ambulance!

But, we decided that should we ever move from Texas (please please please) we would want for Rhys to have experienced the Great Fair of Texas. Yee haw. Rhys was super excited to see the ba-tub. Big Tex. You can hear his voice on the state fair website. Rhys wanted to play it over and over and over.

Kite On A String. Which way will the wind blow? Friday, June 5, 2009. I turned 30 in April - aaauuuggghhh! Titus took a couple days off and we spent sometime together as a new family of 4. We visited the statues of the mustangs, the Rainforest Cafe, and took pictures with those famous Texas wildflowers. Rhys was scared of the animals and noise at the Rainforest Cafe. A year ago he loved it. He eventually warmed up to it but still needed to stay close to daddy. It was unbelievably windy. The Four of Us.

I got a call last week letting me know Aitan was enrolled in the PreK program at Virginia Road Elementary and it starts Tuesday. AAAAHHHH! I had read somewhere that PreK started September 6th, so I was very unprepared. Oh, well. You are such a great mom, Dana! I just love your approach to parenting and for being so candid in your posts. Hope both Aitan and Ilan have a great school year!
