It seemed easy and delicious and that was just what I needed Monday night! It was so easy and really good that I couldn't even believe it! A year devoted to food from my kitchen to yours! December 7, 2011. No need to overdo it! I didn't want to overwhelm you with like a million days worth of stuff so I chopped it in half! Sunday (I totally almost jacked up all my days! I made a crockpot meal (only because I had it leftover and didn't want to go grocery shopping that day.) and it was a doozy! Chicken and Pumpkin Goulash. I think it turned out well despite not having chunks of pumpkin in it! The flavors were great! Crockpot meals are the best!

A year devoted to food from my kitchen to yours! May 31, 2011. Cooking for 1 on the fly. Well Justin had a work function tonight so I ended up making a sort of dinner for one. Meaning it's just me and I ate what I wanted to! I found this recipe in the Rachel Ray magazine (you can look for it online. but I'll post the recipe straight from the mag). Chicken Meatballs w/ Sweet Peanut Sauce. 1 lb ground chicken. 1/4 cup dried breadcrumbs (of course I used panko). 1/4 cup finely chopped (or grated) onion.

Let's go all the way back to Christmas Day, where for the past 3 years we have been making Christmas Ribs as a tradition (a very delicious tradition! The Best Ribs Ever. 1 rack of baby back ribs (we usually do 1 per 2 people but you can adjust accordingly). 2-3 tbs of pork rub (your favorite, I usually use a rub that has cinnamon and chipotle in it). 1/4 - 1/2 c bbq sauce (your favorite). Wrap tightly in aluminum foil and cook for 4 hours.
