Monday, March 23, 2015. The story of pumpkin soup began years ago when Max was about two and we still lived in our old house. After a day at the park, we'd go to Jean's Vegetarian. A restaurant nearby. Max loved the pumpkin soup there. It was rich, warm, sweet and spicy. Jean's now has new owners and the food is not the same. After many attempts, I think I have found a recipe, though not exactly the same, may satisfy Max's taste buds. Oliver enjoyed two helpings at lunch today. Also read Pumpkin Soup.

Tuesday, June 17, 2008. Preheat the oven 375 degrees F. Grease or line some muffins tins. 1/2 cup soy milk. 1/2 tsp pure vanilla extract. 2 tsp sour cream. Mix these wet ingredients together in a small bowl. 2 tsp baking powder. 1 cup all purpose flour. 1/2 cup whole wheat flour. Mix these dry ingredients together in a larger bowl. Add 1 cup of fresh sliced strawberries to the flour mixture and toss to coat berries in flour. Makes about 9 muffins. Subscribe to: Posts (Atom).

I do cheat once in a while and still handle a lot of meat so I don't feel vegetarian. Still trying to up our bean intake but its getting better.

Tuesday, April 21, 2009. Millet Pancakes for Max. 1/2 cup barley cereal. 1/2 cup toasted and ground millet. 1/2 tsp baking soda. Tiny pinch of salt. 1/2 cup soy milk. 3 Tbsp maple syrup. 1/2 tsp vanilla extract. Mix together dry ingredients. Mix together wet ingredients. Stir together until just combined. Add water if mixture is too thick. Drop by tablespoon on medium heat griddle, cooking on each side till done. Extras and toast as needed. Subscribe to: Post Comments (Atom).

Grease a loaf pan. 2 cups chickpea flour. 1 Tbsp tapioca starch. 1 tsp baking soda. 1 tsp ground cinnamon. 1/3 cup dark brown sugar. 1/2 cup olive oil. 2 eggs, beaten. 1/2 tsp vanilla extract. 2 ripe bananas, mashed. 1 1/2 cups large zucchini, grated. 2/3 cup chocolate chips. Saturday, October 04, 2008. This muffin is meant to replace the hot oatmeal breakfast I use to make most mornings for Scott to bring to work. That was before Max was born. I left out the raisins, although that would be good, but its got most of the other elements including the brown sugar sprinkled on top. 1 cup soy milk. 2 tsp baking powder. Brown sugar (to sprinkle on top). 2 small apples, peeled and chopped. Preheat oven to 400 degrees F. Grease a 12 cup muffin tin. Subscribe to: Posts (Atom).
