Food From Down Under. The Down Under Pavlova! 3/4 cup beer (your choice). Sift flour and salt. Seperate egg, beat in yolk oil and beer into flour. Beat in egg white to very stiff and fold into batter when ready to use. Dust fish in seasoned flour and dip into the batter, fully coating it. Drain excess on side of the bowl and drop into hot oil until golden crisp. Remove and drain before serving. Poached Salmon with Garlic. 8 salmon fillets, skin removed. 1 1/2 cups of grape seed oil. 1/2 cup basil leaves.

Kiwifruit and Coconut Muffins. 2 kiwis, finely diced (about 3/4 cup ). 2 cups all-purpose flour. 3/4 cup granulated sugar. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 2/3 cup light coconut milk. 4 tablespoons butter, melted. 1 large egg and 2 egg whites, lightly beaten. 1 teaspoon orange zest. 2 teaspoons pure vanilla extract. 1/4 cup toasted sweetened shredded coconut. 3 tablespoons sweetened shredded coconut. Peel kiwis. Dice and set aside.

Food is our common ground, a universal experience. Local is good, but sometimes you want flavors from afar. I love local foods. In every season. BUT, sometimes I just really crave flavors that are not from here. Pad Thai is one of my rotational dishes. Here is a really simple recipe that you can obviously tweak to your liking. 7 oz dried flat rice stick noodles. 3 tbsp. tamarind pulp. 3 tbsp. palm sugar or light brown sugar. 2 tbsp. nam pla (Thai fish sauce). 1 tbsp. rice vinegar. 1 tsp Thai chili powder.
