Where something's always cooking . . . Laquo; #1: The Flourless Chocolate Cake. The 1800’s Baked Fudge. 2: The Quail Run Chocolate Ganache with Raspberry Coulis. For a recipe with a mere 9 ingredients, this one was surprisingly involved. Melted white and dark chocolate are each whisked with heavy whipping creme and then alternately poured into a 10″ crust made of pecans, butter and sugar. I used a square tart pan with a removable bottom and the “tart” came out easily. Next up: The 1800’s Baked Fudge.

I was so surprised that I had every ingredient on hand except whipping cream for this first recipe from “Dulce”. The first step was to whip 6 egg yolks with sugar into a thick, creamy consistency to add to a mixture of melted chocolate and butter. L) Melted Chocolate and Butter; (R) Whipped Egg Yolks and Sugar. Would my folding turn into stirring?
