I’ve never made muffins before so I thought I’d give it a go today, and this recipe I tried seems pretty easy. It makes 12 muffins and here’s what you need:. 2 tsp baking powder. Frac12; tsp bicarbonate of soda. 185g unrefined caster sugar. 2 eggs, lightly beaten. 1 tsp vanilla essence. 125g melted unsalted butter. 2 tbsp Demerara sugar. Start with heating the oven to 190C. Line a 12-case muffin tin with paper cases. Into a large bowl sift the flour, bicarbonate, baking powder, sugar and a pinch of salt.
