I spent an afternoon with an old friend teaching her to use a chef's knife, and this is the recipe I came up with for her to make that afternoon! Marinate pork in citrus and grill it (or roast) and top it with this pineapple salsa and you will have a fantastic dinner!

July 22nd, 2012 - Coeliac Recipies. Not too long ago I picked up some really nice tomatoes, and fresh mozzarella. My little basil plant is doing nicely, and it all added up to pizza Margherita! Named for the queen of Italy at the time it is all about the tomatoes! Of course cheese and basil never hurt either, oh, and roasted garlic! Hope you guys all enjoy it! Guacamole can be either really bad or really good, and funnily enough until I had to make it at work (I am a cook, and have celiac.) I never knew how good it could be. My guacamole gets the Latin American Sous Chef compliments when I make it! I'm about as gringo as gringo can be! At which point, he points them to me! Happy Cinco de Mayo!
