Spinach and Sausage Lasagna Rolls. 9 lasagna noodles, cooked. 10 oz frozen chopped spinach, thawed and completely drained. 2 large spicy sausages, cooked. 15 oz fat free ricotta cheese. 1/2 cup grated Parmesan cheese. Salt and fresh pepper. 32 oz tomato sauce. 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded. Oven to 350°. Spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Saute chicken in a pan (no need to oil or butter the pan first) over medium high heat until browned on both sides and cooked through. Keep whole or cut into big chunks and add to sauce. Saturday, May 10, 2014. Pancake mix (because I'm lazy). Half a stick of melted butter (yum). 1/4 cup packed brown sugar plus two tablespoons ( just dump some more brown sugar in after the 1/4 cup that's what I did). Mix all those together and put on to ziplock and cut corner off. Heat griddle, pour pancake mix and swirl you filling from outside in. Wait till pancake is bubbling to flip. Serve with syrup.
