November 14, 2007. Dinner Tonight: Pasta Fagioli. This is such a quick and easy meal! I keep these ingredients in my pantry and can throw them together in a matter of minutes. The soup is ready to serve within a half an hour. a crusty loaf of bread and a salad make dinner feel complete! 2 Ribs Celery, thinly sliced. 1 Small Onion, chopped. 3, 4, 5 or 12 Cloves of Garlic. 1 Jar Marinara Sauce (I use Classico Spicy Red Pepper, anything works). 1 32 oz Box Chicken Broth. 1 can Great Northern or Navy Beans.

January 5, 2008. A Twist On Pot Roast. Thought I'd share what we're having for dinner tomorrow night. Occasionally, we'll get pot roasts from Costco in packages of two. I typically make them like mom - in the slow cooker with carrots and potatoes. But a few months ago, I was in the mood for something a little different and combined a few recipes with some things I had on hand and this was the result. It'a kind of a tangy, sweet and sour roast:. 1 onion, sliced. 1 1/4 cups beef broth. 1/4 cup brown sugar.

June 20, 2007. A friend from church brought this to my house for a pot-luck and it's become one of our favorite side dishes. It reminds me a lot of the sweet Mexican corncakes. From Don Pablo's or a less bland version of a spoon bread. This pairs really well with BBQ pulled pork, chili or even Tex-Mex dishes. 1 can creamed corn. 1 can whole kernel corn. 1 stick melted butter. 1 cup sour cream. 1 box Jiffy cornbread mix.
