Thursday, October 13, 2011. Cathy and Bob Schroerlucke's Bomb Banana Cake. You can use any frosting, but I like this one. 2 Cups sifted confectioners' sugar. 1/2 cup butter, softened. 1 tspn vanilla extract. 2 tbspn cocoa powder, optional for chocolate frosting. Cream sugar butter and vanilla. Add a small amount of milk, 1 to 2 tblps. Add cocoa if desired and beat until fluffy. If frosting is too sweet, add a little more milk. These are very sweet and savory! 3/4 cup butter softened. 1 cup white sugar.
