Monday, December 31, 2007. 410 gm butter beans, cooked and drained. 2 tbsp olive oil. 2 tbsp lemon juice. 125 gm packet light garlic and herb cheese (Boursin). Put the butter beans into a processor, and then pour in the olive oil and lemon juice. Add a pinch of salt and freshly ground black pepper. Whiz to make a smooth paste. Add the garlic and herb cheese, blend until smooth, then put into a sealable container and chill. It will keep in the refrigerator for up to three days. WAYS TO SERVE THE SPREAD.
