Monday, May 16, 2011. Meringue Ring with Chambourd-Currant Sauce. This is basically an elegant way to eat more whipped cream. Preheat oven to 350°F. Make a stiff meringue from about 6 egg whites and 3 cups of sugar (I like to use some light brown sugar as well as granulated). Add 2 T. of chambourd to the paste. Form the meringue into a ring on parchment or foil using table spoon drops or by piping from pastry bag. For elegant presentation, do a thin base and several circular rings. Bring to a slight boil.

This is a really high calorie adult treat. 1 large package of Jello Instant Chocolate Fudge Pudding (requires 3 c. liquid to be added). 3 cups heavy whipping cream. 1 cup whipping cream. Powdered sugar to taste. 1 Mix very cold whipping cream and Kahlua in a measuring cup. 3 Spoon into serving bowl(s). Ravioli stuffed with spinach and ricotta (I cheat and buy this already made rather than making it myself), about 8 per person if this is the pasta dish for a meal, more if its the main course. Olive oil (Greek if possible! Italian or California is fine, but I have a bias.). Garlic – lots, 4-8 cloves per person. Red wine (Greek, if possible). Garnish: Crumbled feta and fresh oregano. Simmer the garlic in olive oil until just browning in a sauce pan.

Roasted Chicken (left over is fine! With a little skin and liver (if. Pickled Peppers (sliced, seeds removed). Pickling juice from the peppers. Metaxa (or some other flavored brandy).
