Consiga un kilo (dos libras) de filetes de corvina, limpios, sin piel y sin espinas. Muy fresca, de preferencia nunca antes congelada. Lávelos en dos o tres aguas con mucha sal. Use agua muy fría. 1 kilo (2 libras). 20 a 30 limones.
