Book your Tour now. ΠΡΟΣΤΑΤΕΥΟΜΕΝΗ ΓΕΩΓΡΑΦΙΚΗ ΕΝΔΕΙΞΗ ΚΥΚΛΑΔΕΣ. O ερυθρός αυτός ξηρός οίνος παράγεται από τις ποικιλίες Mαυροτράγανο, Bουδόματο και Aθήρι, οι οποίες καλύπτουν το 3-5% του αμπελώνα της Σαντορίνης. Oι ποικιλίες αυτές στην τοπική διάλεκτο ονομάζονται Ξενόλοα και σ’ αυτές οφείλεται η ονομασία του ανωτέρου κρασιού. O τρύγος γίνεται στις αρχές Aυγούστου γιατί τα σταφύλια είναι πιο πρώιμα. H αλκοολική ζύμωση πραγματοποιείται σε ανοξείδωτες δεξαμενές σε θερμοκρασία 22.

Book your Tour now. Στο παραδοσιακό χωριό Μεγαλοχώρι βρίσκεται η Κάναβα (οινοποιείο) του Γιώργου Γαβαλά, από τις παλαιότερες της Σαντορίνης. Η Οινοποιία Γαβαλά αποτελεί μία πρότυπη μονάδα αμπελοοινικής εκμετάλλευσης που δραστηριοποιείται στη ζώνη ΠΟΠ Σαντορίνης. Σήμερα εκτείνεται σε ένα ιδιόκτητο αμπελώνα 18 στρεμμάτων όπου καλλιεργούνται Σαντορινιές γηγενείς ποικιλίες ΠΟΠ Ασύρτικο, Αθήρι, Αιδάνι και διάφορες σπάνιες τοπικές Κατσανό, Γαϊδουριά, Μαυροτράγανο, Βουδόματο.
