Glidden's Island Seafood. Baked Halibut au Gratin. There are so many ways to cook halibut. As it’s mild in flavor with little oil, it’s great with all kinds of sauces. Just be careful not to dry it out. When it flakes with a fork–it’s done! 2 lb halibut, about an inch and a half thick. 3 Tablespoons mayonnaise (Hellmann’s Light, is there any other kind? 1 Tablespoon lemon juice. 2 Tablespoons dry white wine. Sea salt, fresh ground pepper. One-fourth cup freshly grated parmesan cheese. February 21, 2012.
