I got this recipe several years ago from Top Secret Recipes and have adapted it only slightly. I think it was originally listed as a taco sauce, but I use it as an enchilada sauce. You can enrich the flavor by using veggie broth, but I generally use water. 3 cups water, divided. 2 teaspoons tapioca starch. 1 6 ounce can tomato paste. 3 tablespoons vinegar, raw a/c. 4 teaspoons chili powder.

Wednesday, December 31, 2008. I came up with this recipe to fit in my 12-count Wilton mini muffin pans. For me, things work better in miniature. Preheat toaster oven to 375 degrees. 1 1/3 c brown rice flour. 3/4 tsp baking soda. 1/2 Tbsp tapioca starch heated in 1/2 cup water till thick (micro 30 sec, stir, 30 sec). 1/2 cup mashed fruit (bananas, strawberries, sweet potatoes, etc). 1/4-1/2 cup water, depending on wetness of fruit.
