Tuesday, April 6, 2010. Summer always makes me crave barbecue. There is nothing quite like the smell of burgers grilling in a backyard. Since I live in New York and out door space is considered a fire escape, I have to be a little more creative to fulfill my craving. This is a very low fat meal with every bit of flavor and taste that I remember from my summertime cook outs. 1 1/2 lbs ground turkey. 3 large portobello mushrooms. 2 T olive oil. 1 T olive oil. 1 1/2 medium onions. 2 T balsamic vinegar.

Friday, July 30, 2010. I found this recipe last week when I was looking for a quick and easy summer recipe. I ended up making the pesto and serving it on a sandwich with bacon and lettuce kind of like mayo but this is what the recipe is actually intended for. Serves about 4- 6 people depending on how much pasta you make. 6 pieces of turkey bacon cut into half inch sections. 4 cups fresh corn kernels (cut from about 6 large ears). 1 T minced garlic. 1 1/4 teaspoons coarse kosher salt. 1/3 cup pine nuts.
