Navigating my way through this new Gluten-Free life! One of my go-to dinners is meatloaf – especially in the winter. This past week was rather chilly, gray, and rainy around here so I decided to make a meatloaf using one of my all-time favorite recipes. This one was originally in Cooking Light magazine a long time ago. I’ve made some adjustments to it, but I still feel like I should give credit where credit is due! 1 1/2 pounds ground beef, extra lean (raw). 3/4 cup chopped onion. 1 clove garlic, minced.
