For the vegetarians I made South African eggplant stew with peanuts, raisins, garlic onions and spices and made an apple chutney and coconut rice with potatoes and peas for both entree’s. These are from my Camp cooking buddy Michiline Dulac, from Zanzibar, who also gave me the recipe for the Date Squares and the bran muffins. I acquired this recipe from a fishing camp in beautiful Horsefly B.C. This recipe keeps well in a sealed container in the refrigerator if you like to make your batter in advance.
